I have raised two turtles since they were babies. Its an easy question to answer. Turtles shells are made up of sections of plates. Think of them as shingles on a roof almost. As they grow, the smaller and older sections are shed off revealing newer and larger shell sections underneath. Its a very gradual process and the only evidence you will have of it is they just keep getting bigger and you will have the shed sections of shell in the tank.

Even after a turtle is fully grown, they will continue to shed old plates of shell off and expose the newer plate underneath. The size will stay the same.

I think that they add another "ring" near the bottom of the shell (closer to their feet). The parts near their back are the old ones from when they were little. I believe so but wouldn't swear to it.
