A proxy is anything that acts as a go between. SMTP has to do with email and mailing protols. So a SMTP proxy is the go between, between your computer and the actual mail server.

Why do this?? The proxy hides the address of the "real" mail server making it easier to secure and providing some performance increase. Proxies can also handle the mundane tasks like spam filtering and such.
