I live in zone 5, and my cantaloupe are the proper size
but the color is off white

The stem should detach from the fruit very easily, leaving a sort of a "inny" betty button on the fruit. If it leaves like an "outy" it's not ripe. (and you'll have to tug a little harder). As you are aware, a cantaloupe has sort of a textured skin. The raised and inner texture of the skin should both be about the same color, (a light yellowish/tan color) If you see any green, let it grow a while longer. Though a taste test is the best solution. Pick one that looks ripe and cut it open and taste, it the fruit is hard and not sweet, it's not ripe enough. (If the fruit is mushy and not sweet, it's too ripe).

They'll turn a yellow shade. Or, you can smell them. Ripe smells like when you cut into one.
