Both countries have lots of souveniers for sale - primarily carvings, beads (very beautiful ones) and clothing from local fabrics. Your dad will be spoilt for choice. If you like different colorful jewellery, he could bring you back some beads in the form of necklaces, earings, bangles, ankle-decorations, etc. Or he could bring you back shirts, skirts, dresses made from local fabric - or he could buy fabric and you could use it as a wrap or make something/ask somebody to make clothing out of it.
Ghana also has local sandals for sale (my advice: use those only for decoration, very pretty but I found it difficult to wear...).
Ghana also produces inexpensive jewellery from brass, which are very nice, mostly in local symbols.
Ghana ofcourse has the magnificent kente cloths, which work well as a winter scarf. The country also has mudcloths from the region for sale, very beautiful, but heavy so that needs to be kept in mind, but most probably a gift to the household: they can be used for decoration against a wall, table-cloth or bed covering.
I found Kenya's wooden carvings to be superior in quality to those in Ghana, so if you want wooden carvings ask him to try and get it in Kenya. Also when I was in Nairobi last, I saw some African dolls (I think manufactured in South Africa) but those are also nice, although not strictly from those countries. They were however dressed in traditional dress, which is interesting.
Photographs are always nice, so try and persuade him to take lots, but if he is anything like most dads on business trips, he most probably won't have time, so ask him to buy you some postcards at the airport that depict the people, the landscape and general scenes from the country. It will add nicely to his other gifts.

When I visited Ghana a LONG time ago, street vendors sold hand-made carvings and hand-sewn traditional shirts that weren't too expensive. We brought back a hand-carved wooden chess set. You don't have to go for anything extravagant, but local artwork is always good- it will be distinctly different from something you picked up somewhere else in the world- unlike T-shirts :)

Anyway, ask for a wrap or scarf. Maybe a pretty beaded necklace or earrings? Maybe a wooden trinket box with designs to represent the country? They have all kinds of vendors that sell in huge market places. Almost like a big flea market with people selling homemade trinkets or what nots. I'm sure they won't be expensive so he may be able to get you a few things! :)

I have been to Ghana several times and Iam going back in November and I find that their dress material is very nice as well as the men dressing so maybe try that and its not very expensive.
