Surely if it was air moving from a high to a low pressure then it should flow at a uniform pace? In Durban today it is switching from gale force, to a breeze then back to gale force in a matter of seconds, why?

Either from the passing of a cold front or when your hometown is between High Pressure and Low Pressure areas, otherwise known as Tight Pressure Gradient.
