They're sold or destroyed, depending on what movie/what happens in the movie.

Fast and Furious cars are worth a ton of money. The cars from James Bond films end up in museums, so do Batmobiles. The ones that get blow up and stuff end up as scrap metal.

Actually some years ago a movie company was here in town to film a period piece set in the early 1960s for which they needed cars. As I then owned a 1959 Mercedes, they rented it for the day and let me come to watch them film as well. As it turned out, a scene they had planned to film outside was complicated by rain, and so they filmed that inside my car as well. As a result, I now have a copy of the movie with Tommy Lee Jones sitting in my car talking for about five minutes.

Often times the nice ones are rented from a company that specializes in keeping cars from certain time periods and they go back to the company when the filming is done.

When they wreck a rare or valuable car, they might use the original in the movie but build a look-a-like for the crash from sheet metal or fiberglass.
