Yes, start saving change it adds on really quickly. Make some of your gifts e.g. cookies, photo albums or frame things from your kids. Ask anyone if they need help to earn extra cash you could help them with errands or cleaning. I would also consider having a garage sale and also you can take a few dollars out of the grocery budget if it's something unhealthy it will be healthier for the kids anyway.
Budget your money. You can save money by not eating out, buying lotions of frivolous items. Start a coffee can and add change and a couple dollars a day you will be surprised how quickly it will add up.
You could even make ornaments for gifts. I would get my kids first their gifts and then do thoughtful gifts for everyone else. You may find by giving gifts from the heart is truly feels like Christmas, all the materialism is not what it is about.
Good luck!

When it comes to family and friends, why don't you do a "secret santa". Everyone buys for one person only. We do that with a group of friends and it works well. We put a $20 limit on it and it is nice. You get to spend time looking for something special for that one person instead of spreading your time across all people.

When it comes to your young children and fiance, have a look at eBay.

i go through Jackson Hewitt for my Christmas money.
they will give you about $500 and than take it out of your income tax money.
you can try that one. it does save a lot on the stress. that's at least $500 you don't have to worry about coming up with.
if you're anything like me...$800 to $900 at Christmas time is usually what i spend and it's nice having it come out of my tax money.
