English or Psychology are both really good, because you have to be persuasive when making arguments in court (which all that essay writing in English class will help with) and you have to understand people (which Psych helps with).
But really, the best way is to study what ever subject you are really good at, and like to do. This will help you get the best GPA you can, which will help you get into law school more easily.
