It depends on the level of tournaments. Most minor tournaments will only go to a best-of-3. These tournaments come in between the major pro championships (US Open, Wimbledon, French Open, and Australian open), which are always best-of-5 sets.
Another thing to note is that women always play best-of-3 sets.

For men,grand slam matches and the finals of the Master tournaments are best-of-five matches.It means that the one who wins 3 sets first ,wins the match.So,the result can be a 3-setter(if the winner does not lose a set;eg.6-1 7-5 6-4), or a 4-setter(if the winner loses 1 set;eg.6-2 6-2 0-6 7-6 or 1-6 6-4 6-1-6-2) or a 5-setter(if the winner loses 2 sets:eg.3-6 7-5 7-6 2-6 6-4 or 6-1 4-6 6-0 0-6 6-2).
For women and the other matches for men,it is a best-of-3 setter.So,the result can either be a 2-setter(if the winner does not lose a set;eg.6-1 6-2) or a 3-setter(if the winner loses 1 set;eg.4-6 6-1 6-0 or 7-5 5-7 6-4)
