i played a MUD for seven years called Age of Dragons, based on dragonlance, an AD&D branch.
for platforms?
nes - dragon warrior IV (though final fantasy was good)
sega - phantasy star IV
snes - this is lufia II. no other RPG has come close to equaling this incredible game. awesome battle system, great side-dungeons, great balance. tough puzzles. (two of which are so incredibly hard the first time you see them). come to think of it, LUFIA II is the only game i've ever seen with near perfect 10 scores in gamefaqs reviews.
-other greats for snes are FFII (yea, i know, it's called ffIV now, but the cart still says II). Chrono trigger was awesome. super mario rpg was great, as was FFIII, illusion of gaia, secret of mana, secret of evermore, zelda link to the past
GBA - pokemon fire/leaf, FFIV advance was remade excellently, FFTactics advance, tactics ogre
N64 - zelda: Ocarina, ogre battle 64, paper mario
PSX - xenogears, ogre battle MotBQ (even though it was an snes remake)
PS2 - la pucelle tactics, disgaea
GC - Zelda:Windwaker, harvest moon wonderful life
DS - mario:partners in time, but i can't wait for final fantasy III. i'm also quite curious about final fantasy : crystal chronicles. and even though it's seen as childish, or _SO 1990_, pokemon pearl/diamond is on my list, because those games have always been put together with more balance than any other rpg i've ever played

If you mean RPGs in general, then you need to go tabletop. There's not much that can compete with a four or five year running D&D or Rifts campaign. The tabletop doesn't need to be physical, if you have a group, you can just as easily play over Skype or your favorite VOIP setup.
If you mean limited just to video games, Final Fantasy 2 (american numbering). FF 2 was, IMO, the best of the series. The newer games look better, and have wider distribution on the PS consoles, but the playstyle is different. I prefer the older games. The original was also amazing, but for different reasons, I'm calling it second place. Third place goes to Fallout, because Fallout was a blast.
If you're looking for something to pick up now-ish, and your taste in RPGs doesn't mind turn based strategy elements, keep an eye out for Disgaea 2 for th PS2. The original was a blast, I have high hopes for the sequel.

Final Fantasy 7.
That was the RPG that opened my eyes to the genre. I got it because I was hearing all this talk about it months before it launched, and I was curious what all the fuss was about.
Once I played it, my gaming life changed forever. I was officially an RPG-er, and I've now played and if not beaten several RPG's such as Suikoden 1 & 2 & 3, Grandia, Chrono Cross & Chrono Trigger, Final Fantasy 8 & 9, Wild ARMS 1 & 2, Star Ocean:The Second Story, Final Fantasy X & X-2, Legend Of Mana, Saga Frontier 1 & 2, Legend Of Dragoon.

Dungeons and dragons. 5 or 6 friends sitting around 25 years ago using our imaginations and laughing our butts off. The companionship of course was the whole point. These days I would say Knights of the old republic.
