Main reason is because Japan's past and most of it's myth are based on demons and beasts of all forms.. Japanese believes that most demons and bests are existing especially during the feudal era.. That's why most anime films and shows are demon/beast based..
Another thing, it add a long-term story of some sort.. Not to forget the graphical representation of the demons.. They are trying to get the 'what they believed' as how demons looked in their Japan's myths and folklores..

Well, most Anime from Japan has demons involved on the count that "demons" are a big part of Japanese "tall tales"/"stories". Just like princess and comic (DC/Marvel) superheros here in America.

that question is a good one but i like anime and so i think i can help. mabey its because in anime there is nothing stopping you writing about demons. like if you are writing a real life fiction story then it wont make any since if there are demons.

Demon are Americans in symbolism
Japan will never forgive america and will alwyas think america is trying to wipe it out or control it hence all the demons are Americanized if you watch them in human form

Because they are cool. Almost every culture has them, and they are more fun to draw than regular human beings because they can have ears and tails and all that good stuff.
