Wonder if anybody can tell me what kind of things I can sightseeing or do in N. Dakota, Fargo ? (during end of Jan ~ Feb.) Considering that I will be there only 5 days, backpacking from S.Francisco to Fargo alone. I am not from the states. Also I've doubts that if it's better take the Amtrak to go there or simply fly by plane.

Your crazy for going to ND in the winter. Take long johns along because you will need them. Extra socks, gloves or mittens, snow boots. Don't go backpack for SF to some where south like Arizona or Florida or Texas.

I live in Minnesota and you are CRAZY for thinking of backpacking there at that time of year. It is the coldest part of the winter in this area. I am serious. The windchills get to minus -50 and worse. And that area is flat and gets blizzard conditions on a regular basis. Please reconsider the time of year you are planning to do this. They also close the highways when conditions get too bad.
