Mud bricks have been made since at least the settlement of Jerhico 8,000 BCE. The Romans are responsible for the way we make bricks today.

The first bricks made in California were adobe bricks for homes and buildings by the early Spanish and Mexican settlers. These bricks were made of mud and straw, shaped into large blocks by wooden molds, and sun dried. I already knew this but a checked that link anyways to be sure. Look there for more info.
