Write one entry about the characters - your favorite, which one you relate to better, etc.
Write another about the setting - when and where is it? Is either part of the setting relevant to the plot - if so, explain.
Write another and compare it to something - a movie, a TV show, someone you know or have read/heard about.
Write another and discuss any relevant themes - friendship, love, death, etc.
Write another and talk about the mood and/or tone of the book. What effect did it have on you and WHY?
The key to an effective journal entry is that you DISCUSS things - not just MENTION them, especially if you are in high school, college, etc. Each entry should be anywhere to 1/2 page or MORE.

Maybe it would help as you read to kind of jot down topics, and then maybe you'd have a list of five things you could write journal entries about. Maybe compare something in your life to something in the novel?

Split up the book into 5 sections, I hope this helps, I had a similar problem w/ my summer assignment.
