Well, for sure you have:
Navy - Midshipmen
Notre Dame - Fighting Irish
Illinois - Fighting Illini
Beyond that it's tricky. Technically these schools should work since they're not animals, just groups of animals:
Nevada - Wolfpack
N.C. State - Wolfpack
Marshall - Thundering Herd
A case could also be made for the following, since the color is only an adjective:
Tulane - Green Wave
Tulsa - Golden Hurricane
Alabama - Crimson Tide
Other posters: Massachusetts isn't division 1-A, right?

There aren't five, unless you want to count the Marshall Thundering Herd. These are the four I came up with: Notre dame Fighting Irish, Stanford Cardinal, Illinois Fighting Illini, and Navy Midshipmen.
