Chicken of the Sea is a brand of canned tuna produced by a company owned by Thai Union International (from 1914).
The company's official explanation for the name of their product:
In the "old days," fishermen referred to the white albacore tuna as "chicken of the sea."

because there is a lot of chicken on land (there is something like five chickens for everyone one person alive) sooo that is the main in-expensive meat that is eaten. there is a lot of tuna in the sea sooooo the tuna is like the cheapest most common meat of the sea.

Because chicken was popular back then and everyone enjoyed it and ate it, so then came the tuna which is from the sea so they figured they would aquate it to chicken so people would try it....it is "the chicken" of the sea.
