Elizabeth tied Jack to the Black Pearl for him to die and for everybody else to be saved. The Kraken was only after Jack Sparrow since that's who Davy Jones sent it after since Jack owed Davy Jones his life. If the rest of the crew stayed on board with Jack they would have also been taken down when they didn't deserve to die. Plus if I remember correctly, when Elizabeth strapped Jack to the ship she may have said that Jack was the only one the Kraken was after.

Yes she did. She did it because the Kraken was only after Jack and as long as Jack came with them the Kraken would continue to attack them all. So by leaving Jack chained to the Black Pearl she ensured that everyone else could escape.
