I've been away lots of times and half board means bed, breakfast and main meal in the evening - for if you're out during the day you can eat out - but you can also come and go as you please.
Full board is bed and 3 meals.

Full board means you have to sleep on an 8'X10' plank. Half board means they make you sleep on a 2'X4'. Just kidding, it's the meal structure...All inclusive as opposed to 1 or 2 out of 3 meals included in price of stay.

I am amazed that so many people who haven't a clue put answers on here!
Half-board, or "demi-pension" in France means you get room, breakfast and one other meal per day. The other meal is normally always the evening meal, but often this can be swapped for a lunch, or indeed a packed lunch if you are going out for the whole day - depends on the standard of the hotel by which I mean whether they are keen on customer care, not how many stars they have.
If you are going on a package deal, look for the Ts & Cs (terms and conditions) in the back of the brochure, where they will usually clarify any terms used.
Have a nice time, wherever you go.

Half board means that your breakfast and evening meal is included in the price you have paid. In some cases you can choose to receive lunch instead of breakfast - the hotel will confirm this upon arrival.
