Well, the two main things you want to protect against is damage by a broken water line or fire. You should cut off the water outside your house, close to the meter if you can find that valve. Then you should drain the lines down. Turn off your water heater (gas or electric) and drain. Cut off the gas supply to the house at the meter (if you have). You can decide if you want to leave the electricity on or not, but if you light the house with timers, it will keep vandalism down.
One thing most people don't think about is the drains and commode. The traps in these will evaporate and open up the sewer lines, exposing the house to sewer gasses. These can be sealed with an antifreeze (if you don't have any pets to worry about), or else you can try something like vegetable oil.

You can do what the other folks say, BUT you should have some one there to check on the house. My brother in law moved out of state and we watched the house, he turned off the water but left the heat and electric for the winter and to show the home. But after a big rain, the widow well flooded and water came in through the basement windows, thank goodness we checked because it was minimal damage when we found it. If left unseen the mold could of been horrific. Just a suggestion, I'd have someone keep an eye on the home.
