How can I tell iTunes that I want to update my podcasts at a time OTHER than 7pm?

Under ITunes preferences and Podcasts change it to check ever hour or perhaps just clicking on "Update" on the top right of your screen when on your Podcasts screen will fix it.

Just do it manually. I don't there is a kind of 'scheduler' in iTunes.
