Normally, the ink used in most pens is in the shades of blue. Why is it so? Can anyone explain?

The ink in pens are usually a black or a blue-black in colour. These colours are used more often than others as they are more "permanent" or longer lasting than other colours (meaning they take longer to fade). Legal documents are generally signed/written in these colours in order to be able to keep them for long periods of time.

Esthetics mainly. Dark blue ink is clearly readable (a yellow pen is totally useless, if it's not a highlighter). Blue also has positive psychological connotations. It's also reasonably easy to make blue pigment (although this is a non-issue these days).

Well, the original inks were not blue, they were usually made of some burnt stuff or soot-so they were black, because of the carbon. As for the blue, historically iron salts were the cheapest to use and so it became the first color other than black.

It has a better contrast against most types of paper and so it's easier to read.
