John Irving - The World According to Garp
John Irving - A Prayer for Owen Meany
Jennings Gery - Aztec
Jacqueline Susann - The Valley of the Dolls
Jacqueline Susann - The Love Machine
anything by James Herriot
Steinbeck - The Grapes of Wrath and compare it with Upton Sinclair - The Jungle. The latter is much better.
Twain Mark - Letters from the Earth
Silverberg Robert - Down to Earth
Stephen King - It
Stephen King - Needful Things
Heller Joseph - Catch 22
Golding William - Lord of the Flies
and if you don't like anything of this you can still try Grisham.

Kind of a big book and a very tragic story, but I would suggest Beach Music by Pat Conroy. It's not a biography at all, but there are some parts of the story that involve the Holocaust a bit, though it's certainly not centered around that.
It's my favorite book. I'd recommend it to anyone (if you like a really good dramatic story).
edit: str7_2000 also has a pretty good idea. ;-)

Make sure it's an easy read that can be picked up and put down without losing the thread. Don't take anything heavy duty or depressing as it will mar your holiday. Bridget Jones Diary or Edge of Reason are good (don't worry if you've seen the film - it's not a patch on the book.) Or My Life on a Plate and Don't You Want Me by India Knight are hilarious. Real good poolside reads. (I'm assuming you're a woman!!)

Try some non fiction - I found I was getting bored of your average bestsellers so I tried The Tipping Point by Malcolm Gladwell, about why certain things become huge or seem to take over the world, like Microsoft or Harry Potter. It was fascinating and changed the way I looked at the world. His second book Blink about the way we think and make decisions was also brilliant. I'm a non-fiction convert!

you should read if you haven't read them yet;
Enders Game, by Orson Scott Card
Twilight,by Stephenie Meyer (A very GOOD BOOK)
Just Listen, by Sarah Dessen
Sweetblood, by Pete Hautman
The Naming,by Alison Croggon (also a very GOOD book)
and there is a second book called The Riddle
Mostly all these books are good and you should read them since you are a fast reader because most of these books are pretty thick. Have fun!!! :)

I read The Little Prisoner, a shocking story about child abuse which I found fantastic in a very strange way. I realised how ignorant I was until I read that book but beware, it is a tearjerker. I read it in about 3 hours. After that I read Goodbye Dearest Holly by Kevin Wells, another tearjerker. If you fancy a laugh, try Jade Goody's autobiography, lighthearted and easy to read.

I've just finished reading Salem Falls by Jodi Picoult. If you're a fast reader it will only take you 2 or 3 days if you're doing nothing but lying on a beach.

Then i hav just d book 4 u. its called "Jonathan Strange and Mr.Norrell" by Susanna Clarke (pub. by bloomsbury) and trust me it's a really juicy and thick book (but it doesnt put u off) - its a really imaginative book and leaves without words 2 describe it!
It's based in the 19th century and is about the restoration of English magic back into England, the conflict between those who must restore it and the black doings of one particular gentleman with thistledown hair. I've said enough enjoy! ;-)

Don't bother with Eragon or Eldest. Read any of Tess Gerritsen's books if you like thrillers. If you like fantasy read Wicked by Gregory Maguire. And if you like chick-lit I would highly recommend The Devil Wears Prada
