I do not like to disagree with people who already respond, but I found this just now:

And that came directly from petesampras.com which is the "official" site. So on August 7th, 2006 he was still playing.
And from Wikipedia:
"On September 30, 2000, Sampras married American actress and former Miss Teen USA Bridgette Wilson. On November 21, 2002, son Christian Charles was born to him and Wilson. On July 29, 2005, the couple welcomed their second son, Ryan Nikolaos.

Pete Sampras is reported to be playing the 2007 Championships at Wimbledon. Pete has not played tennis since the 2002 United States Open in which he defeated Andre Agassi 6-3 6-4 5-7 6-4. So Pete is supposed to be playing the Championships at Wimbledon this year. Jagminor

Sampras played the first match since his retirement on April 6, 2006 in Houston, Texas against Robby Ginepri. Ginepri won the exhibition match 6-3, 7-6.
He's very private.

Yeah, after he retired he kind of dropped off the face of the earth. But recently he's been playing some exhibition matches (Robby Ginepri, Jim Courier) and World Team Tennis(WTT). He has said that he would like to get more involved in tennis again since he's getting bored.
If you want to see him play again the WTT is your best bet, although you'll have to wait till next July. I think he's doing another exhibition with Todd Martin later this year.

I really liked Pete.. I liked his style, etc.. Unfortunately (or maybe not for him) he retired and I do not know what he is doing now.
