When I was young, I watched an anime where the main characters flew three different coloured jet plains that would combine into different robots depending on the order in which they docked together. The jets were Red, Yellow and Blue and the differences in configuration would change the strengths and weaknesses of the robot in combat. Speed, Strength and manouverability - not to mention weapons..
Help appreciated.

It wasn't Voltron, Gaiking, or Macross. I know that. Gaiking was the dragon, Voltron the 5 Lions, and Macross was the Protoculture story with single jets that transformed into large robotech robots.

I believe you're thinking of Getter Robo (also called Getta Robo in some circles). Three jets which combine in different ways for varied offensive/defensive capabilities, sometimes due to technical problems or battle damage they couldn't link up.
I enjoyed that show, especially the configuration with an impossibly huge missile launcher :)
