Because ambulances typically are coming up fast from behind on the roadway, and you're supposed to pull over for them. When you're driving you would normally see them from your rearview mirror first. The word ambulance is written backwards so you can read it when it's reflected in your rearview.

It is backwards so that when you have one behind you when you are driving, you look into your mirror and see the word right way round, and , hopefully, you will move over to allow the ambulance, or firetruck by.
