It depends on what you want protected. There was no specific God of Protection; each god had a specific role. And what was a protecting god to one person or people was often the enemy of another. Take Athena. She was the goddess protecting the Greeks during the Trojan War, but she certainly wasn't the goddess of protectin for the Trojans, now was she?
And Prometheus wasn't a god. He gave humans fire and was eternally punished by the gods for that. There is no THING he was a god of. He was simply an immortal. Like Heracles (Hercules).

I don't know that there was a specific "God Of Protection?"
I assume that the Greeks just prayed and worshiped their favored God and that God protected them? They all have elements of protective qualities.
Artemis, Poseidon, Athena, Zeus... I'm sure even Dionysus had a few worshipers (he still does today) which is probably why a drunk never gets hurt... It's true!
**Hermes was the God that easily crossed between the living and the dead... He was a theif who was often comissioned by the Gods to steal things, as in the mutulated body of Hector from achilles. How does that count as protection?

Protection of what?? Artemis protected maidens, children and hunters. Zeus protected guests and hosts and ruled over the code of hospitality. Hera protected wives and mothers and faithful marriage partners. Hestia protected the hearth. Athene protected warriors. Hermes protected theives and travellers...
