Actually, beauty is defined by the brain of the beholder, since everything we see and hear, etc. is interpreted by the brain. But, since you asked about beautiful music, here is how we hear it:
Noise results when irregular vibrations are made at irregular times. Musical sound results when regular vibrations of the voice or a musical instrument are produced.
Known as the pinna or auricle, the visible portion of the ear gathers sound from the surrounding environment and sends it down the ear canal. The vibration of the tympanic membrane (eardrum) is transmitted to three small bones (malleus, incus, and stapes) that carry sound to the inner ear. Made-up of two main parts: the cochlea, a system of complex hair cells (sensory cells) and the vestibular system, which is responsible for balance. Tiny hair cells send impulses to the auditory nerve, which in turn sends it on to the brain for the final processing of the sound.

"Beauty" is an adjective for anything pleasing to ones senses. Whether it be sight, sound, taste, touch, or smell. It's all a matter of personal taste. For example, The Roses smell beautiful.
