You can download Youtube videos and convert them to a format that plays on iPod.

If you're using FireFox on Windows, download and install the Greasemonkey extension at http://greasemonkey.mozdev.org/ Add the "Download YouTube Video" script at http://userscripts.org/scripts/show/3982 Restart Firefox, go to the Youtube video you want to download, there will be a "Download Video" option. Click to save file to your computer.

Using Safari on Mac, open Safari's Activity Window, double-click the URL of the video file (the largest file) to download it.

The file will download as a .flv file, so you'll need a converter like iSquint: http://www.isquint.org/ for Mac or Super Video Converter for Windows: http://www.erightsoft.net/Superdc.html
