i have a daughter who left cheese on the counter for 24 hrs with out my knowledge and i of course put it in the fridge when i saw it thinking it was only left out recently only to find out my kids left it on counter for 24 hrs and then one of them ate 2 to y pieces on bread schould i be councerned of food poisioning evan thought its been at least 5 hrs since she ate it and is not sick yet ?

It depends on how much food borne bacteria was on the piece of cheese before it was left out. Generally for the 1st four hours. when the food dips into the Danger Zone (between 40 degrees F and 140 degrees F) the reproducing is slow but then the number of cells double every few hours after it. Even though it's highly unwise to leave cheese out for that long, as I'm sure you know...cheese is after all pasteurized and is full of good bacteria, ie..cultures, which adds the flavors and generally determines what kind of cheese it will become. When you put it back into the fridge the cell division, if any at all was slowed way down.

Remember...even when cheese gets moldy...(cells divided too much) all you have to do is remove the moldy part and the rest will be fine. Meaning...as long as there was no mold on the cheese pieces your child ate I believe the child will be fine if they have a normal healthy immune system.

Also...food poisoning does not take 20 minutes to show up. Depending on the amount of bacteria cells ingested it can take anywhere from 3-4 hours to 12-15 hours. The stomach can not digest food in 20 minutes in order for the body to fully receive the boarding party of bacteria.

The symptoms from the most common types of food poisoning generally start within 2 to 6 hours of eating the food responsible. That time may be longer (even a number of days) or shorter, depending on the toxin or organism responsible for the food poisoning. The possible symptoms include:
Nausea and vomiting
Abdominal cramps
Diarrhea (may be bloody)
Fever and chills
Weakness (may be serious and lead to respiratory arrest, as in the case of botulism)
Headache.

I'm not a doctor, but I wouldn't worry about food poisoning. If she was going to be sick, it would have happened already. If it was milk it would be a problem, but I think the cheese is ok.

well, I'm NOT a doctor-but generally if you are going to get food poisoning you begin to show symptoms in about 20 minutes.

I know they leave cheese out, but it may be in refridgerated rooms. Cheese is processed, so doesn't it preserve better?

Either way, if you don't trust it -- toss it out.

I am not a Dr. either but you have no worrys about food poison.
