No change them now, a simple loop under and then twisting with your hands is suffice. Some guitars are difficult to get the strings up through the body, but once you have them in and to the top of the neck, its quite simple. If you are using an electric its even simpler. As long as you are careful, there is nothing that can be harmed... if you are nervous about it do it with your old strings first, to get the hang of it.
Side note, do not take all strings off one at a time. Reduce the tension gradually on a few at a time and then do them in groups. The wood in an acoustic is tempermental, so the relese of tension completely could cause it to slightly relax.

It's good to have but not necessary. Just practise changing the strings. Read some books or websites on the proper method on how to get the job done (without the string winder). It's useful to learn. Honestly, I never used it.
As for gigs, I always have an extra guitar ready, just in case. I don't think anybody in the audience appreciates string changing and tuning-up.

You don't have to have a string winder to change the strings on your guitar, it just saves you time if you do use one.

been playing for 35 years. if you play alot you should change them when they start to not stay in tune. the string start to stretch and lose their diameter and tone qualtiy will suffer. depending on the strings you buy also depend on there life. i change after about 30 hours of playing. if you change string alot a winder will make the job faster. remember you need at least 5 complete turn on each turning key. string wrap five times around peg post them clip extra string with cutters to keep neat. make wrap neat and not over lapping. will look and sound good. but you can also just use your fingers and the final result will look the same but just take a little longer

String winder is usefull when you need to do it fast, like when gigin' or something. Handmade can be done with pacience and will be fine if you do it with care. There was no stringwinders some years ago...

Sorry I don't play a Guitar but I know many that do and when we talk about "Guitars" and the strings they use...Dean Markley aways comes up. im pretty sure its ok if u do it without having one. i was borrowing a guitur and it needed a new string, so i got one, and my dad had played guitar when he was in highschool. he fixed the string for me and he didnt have a string winder.
