I read somewhere A LONG time ago that they were a mythical creature in africa, that played pranks on people, like while they would sleep, they would take out one of their eyes, an replace it with one of different color.

Kombucha is a kind of fungus that is basically a super-food. It's really, really good for you. I am only guessing here, but I imagine the kombucha mushroom people may or may not be an actual people, but, hear me out.
Have you ever read that book "Ishmael" by Daniel Quinn? The concept of a super-food, something so easy to make that promoted general health, would pose a threat to the FDA, and anyone who made a living selling food or medicine. If you are a somewhat intelligent fan of system of a down, you'll understand that they are probably keen on things that threaten massive, nation controlling organizations.
So the phrase "The kombucha mushroom people, sitting around all day" leads me to think that they found the following concept interesting. A food so inexpensive and readily available that also offered health benefits would free people from the shackles of having to work all g0dd@mned day just to feed themselves. It would be a huge f@$k you to the FDA.
