Guess I'm prejudiced, being a zoo tech, but I'd go with something on animal behavior.
Zoos with research departments often offer internships for students - would be great on your student resume and be great for your science project.

Build an automated portable ramp for a wheelchair... that attaches to a wheelchair...and allows the person to extend it at the bottom of a set of four stairs and retrieve it at the top of four stairs without having to do it manually..........then patent it and send me some money once you've made a billion dollars...I have a nightmare tax bill I need to take care of!
