I don't think I could narrow it down to just one book, but The Dark Tower series would be a great read. Stephen King is an awesome author. One of my favorites!

Misery and the shining. Misery is the only book of his, that, when reading certain passages, made me squirm with revulsion. The Shining had a similar, but, slightly different effect. Edge of seat stuff.

I liked Thinner, it was interesting.
But I would say that his ultimate work - and his best stlye - are the dark tower series. The first book is a little difficult to get through, but after that it gets real good!
