Where would I find the best information on creating spreadsheets?

It depends if you have spreadsheet software and which one. If you have Microsoft Office you should have Excel, Excel has a pretty good tutorial for basic spreadsheets. I learned them the hard way by experimentation then took some classes for the more advanced stuff. You can also check on Microsoft website for help/tutorial files.
Books at the library are free most places, they usually have an abundance of books on spreadsheets etc.
