Na2-EDTA, disodium ethylene diamine tetra-acetic acid, is a "chelating agent". It is able to "bind" divalent metal ions, such as calcium, magnesium, cobalt, copper, etc. It is a non-selective chelator, that is why it binds different metal ions. As opposed to EGTA or o-phenanthrolene which are ion specific.

If I remember correctly, EDTA is an acronym for something longer A, standing for Acid.
EDTA compounds in food are used as a stabilizer so the food does not go bad or change colour as quickly. It is found in wheat and cereals.
I remember using an EDTA compound (It might have been calcium disodium) as an indicator during a titration of metal concentration.

you're gonna want to check your spelling. it's calcium disodium EDTA you're looking for and its a chelator and preservative. it goes after heavy metals and keeps things from spoiling quickly. it's not gonna hurt you any.
