Because there's a good chance that out of all the people involved--plaintiff, defendant, each of their lawyers, judge--at least one will be of a different race than you. Racism colors your perception of them, no pun intended.
There are other ways to do it, though. Bring a "controversial" magazine (High Times, Guns and Ammo). Enthusiastically exclaim "Fry 'em!" when they ask about capital punishment. If you're female and it involves a romantic relationship, use words like "dumbstick-wielding scumbag." (If you're male, try "gold-digging *****.") Wear an overtly political T-shirt, or camouflage, or Goth attire. You can get out!

The court will dismiss people if they have radical, judgemental attitudes which would make them poor jurors.
People want to get out of jury duty because they don't want to spend their whole day, week, month, or year sitting around there.
Some employers don't pay their employees for that time, and some employees work on commission, so being a juror can cause them to lose a lot of money.
Also, some people, like me, really just hate the idea of being in a courtroom and passing judgement on another person.

The jury should be made up of people who are fair and impartial. If you are racist, you can not be fair and impartial. If the defendant is black, if you are racist, you might see him as guilty just because he is black. That is not the kind of person the lawyers and judge want to see on the jury. They will be looking for reasons to get that person off the jury.
