grounds admission lets you in the tournament grounds and allows you to walk about different courts/stadiums to watch matches & practice.
restaurants, shops, and bars are also on the tournament grounds.

in most tournaments ticket allows you to sit at higher levels (further away) in the main stadium and just about anywhere in the other stadiums/courts.
(I think in the US open, you'll have to pay more to enter the Arthur Ashe Stadium-main stadium)

It means the ticket allows you to enter the field and watch the games. a.k.a their revenue ( - expenses)
