Could I play organ music on my digital piano, by overlapping the different levels, that would be on an organ?

It would depend upon the sound you are looking for. Also what kind of organ the music is written for. You may get away with the more simple organ music - the EZ Play Organ music. The more complex music would have to be rewritten. Digital Piano is missing the non-keyboard elements.
