I would say about 1 year. It all depends on what method you used in canning. Sterilize the jars and make sure you leave about 1" from the top. Always use new lids {you can buy these at nearly all stores and hardware stores and grocery and probably at Walmarts. Alot of people use canning wax to seal their canning jars. If you have a freezer you could also get containers or bags and freeze your preserves. My mom always said when you open veggies that have been canned take a pinch of sugar and put into them before heating. This was suppose to take out any botalism {spell?} of the can foods. Assuming that it was properly canned, canned food should last a good amount of time, sometimes a year or two. The best thing to do is surf for your local county extention office, they usually have great recipes, tips, and storage times listed for each type of food canned.

I'd think a couple years as long as the seal is intact. Age may discolor some things, or change the texture.

I honestly think that they are good for life I don't know if the stuff that are canned at home ever go bad. I never knew of any going bad that my Mom and Dad have canned
