Rob Halford, no question. In interviews he comes across as incredibly genuine. I wouldn't be surprised if he could teach me a thing or two about being a stronger person. Plus, despite having seen him in concert, I'd love to hear some Halford wails up close.
I'm a girl, so please refrain from any assumptions of some sexual undertones here. If I was going to go in that direction, it would be all about going back in time and spending some real quality time with a young Dave Murray from Iron Maiden. Hottest. Thing. Ever.
Young Steve Harris, too. Damn.

Joe Satriani, I have never heard any other musician that has impressed me more with the beauty and technique of his music.
BTW, your's is also a good choice, though I would've chosen Steve Harris if I were to chose somebody from Maiden

Jools Holland that man he has helped many up and coming musicians and has a great sense of humour. Not that I am a musician I would just love to meet him and have the chance to ping the cymbal or bang the drums or tinkle the ivories.
A wonderful interpreter of the jazz scene

Does it have to be a living musician? If not, I would love to spend the day with someone like Jimi Hendrix or John Lennon or Jim Morrison.
