Adding and subtracting heat is exactly how matter changes state. If you add heat to ice, it changes from a solid state to a liquid state. Touching it could cause a state change if enough heat is transferred for example your body heat can cause a piece of ice to melt in your hand.

You can change the state of matter by adding or taking away heat, think Ice/Water/Steam. I don't know what you mean by touching the particles

I assume that the matter changes state. the only transmutation of an element is nitrogen bombarded by alpha particles will change to oxygen,this is one of the original atomic experiments.
