Man originated from earlier primates in eastern Africa. In other words, monkeys did not evolve into humans but we share a common ancestor. The big step in their evolution is the drying of eastern Africa about 4 million years ago. When the jungles died and separated, what would become man developed a locking knee joint. This enabled them to walk much farther (and endurance run) to cover more ground and obtain more resources, putting them at a distinct advantage to other primates. If you don't believe me, try walking around without locking your knee, it's hard and taxing.
This adaptation allowed for the development of many other things that we've come to love: our large heads and brains (when we were strictly bipedal, we free up our hands for projects, and this favors big brains), short rib cage (for flexibility), and big butts (something has to give you balance when you don't have a tail).
This climate change occurred when New Guinea moved in the way of a prominent current that brought warm, moist water to east Africa. Over time, these newly smart, adapted primates radiated out of Africa and to the rest of the world. See links below for more info.
And you are wrong, everything above is supported by extensive fossil collections that show a multitude of transitional forms. Science is based on evidence and data. It is your commitment to a fairy tale that is faith based.

You know nothing about Leaky finding human fossils in Kenya then and the fossils found elsewhere! Or is it that you choose to ignore it?
Consider any type of fossil. A few thousand may be found in the places where conditions are exactly right such as the several dinosaur areas. That is a few thousand as opposed to the millions that once roamed the earth.
Fossils are scientific fact and evolution can be demonstrated in both the historical animal record and living animals.
The Bible has very little basis in fact other than a few historical places. Jesus was a real problem to the Romans but no records exist of him even of a crucifixion. At the same time a number of other Jews claimed to be the messiah and these are all well documented. The bible came from a handful of scrolls taken from many hundreds and it is said all the other scrolls disagree with those chosen. Where are the other scrolls? Locked away In the Vatican and no one but no one is allowed access!! What is being hidden here?
Please - believe what you want and follow whatever religion you wish but do not confuse the fiction of creation with evolution. In particular keep creation for your followers and do not try and force it on others who are not Christians. The rest of the world is not so naive.

The dumbest thing I've ever heard is the following:
" If we came from apes"
It's been followed by: why are there still apes.. or as above, why can't we mate with them.
The ignorance of some about theory of evolution is amazing.
We are descendants of a common ancestor (humans and apes) at some point in our shared evolutionary history our paths diverged. We are now at a point where we no longer have the ability to "mate" with apes because our genetic code has been altered to such a degree that the patterns for reproduction are incompatible.
Secondly. There are "pre-human" fossils found everyday, in many many different places (see ref 1). These exemplify the differences between modern humans and those of past ages. We have found in the fossil record many predecessors to humans.
Evolution is a reality, humans have been changing (even recently as in the last 1000 years) this is a method of evolution and natural selection. We, as humans, have also caused evolution - or artificial evolution, by way of the many things we do.
Many people have heard of the Samurai Crab, this is an example of accelerated artificial evolution (see ref 2). The crabs who's shells resembled samurais where thrown back in the water. Over time, this trait became a more common variety of crab because those with it where allowed to survive by humans.
Evolution is always happening, humans continue to change, we may look very different 1000 years from today (by today's standards). However, with urban development and current ways of disposing of people, only the bones of those that we wanted to keep will actually remain.

Modern Humans have been on this planet for some couple thousands years while the species before that lived over millions of years, but like you said the fossils are rare and these are all in theory which seems to fit with everything. Correct me if I'm wrong

You have to look at the methods of fossilisation. At the time these humans/pre-humans would have died, there would have been a lot of much bigger creatures which would have ate the carcass. If this didn't happen, the body would have then have to have fallen dead in a place where sedimentation is going to occur very quickly, otherwise the elements would destroy it. Then there has to be the right minerals etc. in the area for fossilisation to occur. I could go on and on about how hard it is for fossilisation to occur. If you consider how many million upon billions upon trillions of organisms there have been, the amount of fossils we have is a very minute percentage. So fossils as evidence is not so reliable.

Until relatively recently, when agriculture was discovered, there were relatively few humans. As Homo sapiens came into existence quite recently, say 100,000 years ago,, it's not surprising that there are relatively few fossils or skeletons or even bones. When we put forward an explanation of something it has to be probable apart from the phenomenon we're explaining. Recent creation seems so unlikely that it is not a good explanation. It is unlikely because it doesn't fit in with the picture paleontology gives us of how life developed.

Check your facts. Modern man - as in living in settlements- go back for over four thousand years.
The oldest human i.e. homo sapiens date back to 35,000 years
The latest and oldest hominid fossil was discovered in Ethiopia dated at four million years (New Scientist)
Hominid remains are increasing in number, even though rare. Homonids tended to be smaller, more fragile and therefore the bones less likely to survive.
There are problems with the evolutionary theory, but you have chosen a very poor example as human evolution is among the best understood of all.
And as for those of you that can't understand why we can't mate with apes, or why aren't their apes that can walk - apes and humans had a common ancestor once, but now we are too different to mate successfully, and we have evolved and adapted to different life styles over millions of years. We can swim - apes never do, monkeys rarely. We cry salt tears, no ape can. We have a diving reflex, no ape or monkey has (which is why we can talk). There are plenty of similarities but that 0.4% difference in DNA is crucial

Because about ten thousand years ago our ancestors started burying their dead. Up until then they would have been left to the scavengers and there wouldn't have been enough left to make a fossil. It takes very specific conditions for fossils to form. Being eaten and torn apart by animals isn't in any of those conditions. Of the billions of animals that have lived and died on earth, only a small handful have turned into fossils that we can study. The vast majority simply disintegrate or are eaten by a "bigger fish." The observed evidence fits a universe 15 billion years old with a relatively young earth, still well over six thousand years old.

It seems that the neanderthal never really went away, I would say there is increasing evidence of his existence here on Yahoo Answers.
Seriously though, according to research at Oxford University red hair, fair skin and freckles stem from Neanderthal ancestors. "The gene is certainly older than 50,000 years, and could be as old as 1000,000 years. An explanation is that it comes from the Neanderthals.”
Scientists believe Neanderthals to have overlapped with Homo Sapiens and interbred, passing on the 'ginger gene'. Ten percent of indigenous Scots are red-haired, while another 40 percent are supposed to carry the gene. The first Neanderthal bones were discovered in Europe and the first whole skeleton in Germany, so the explanation is faily concievable.

There actually are countless fossil records of of pre-homo sapiens species. You go to any museum of Natural History (an unlikely event for you simple minded creationists) and see a few samples nicely lined up, clearly showing a subtle evolution occurring. It's amazing the ridiculous comments I keep coming across from people who try to deny evolution (this one being just another).
