I saw a lobster that looked really red -- it skipped a suntan and went straight to a sunburn!

No, Many animals are capable of tanning. Swine for instance, have a tendency to become darker in the summer months.

I've heard that pigs can get sun tanned. That's why they roll in the mud to keep them cool and from getting a sun tan

I really don't know if animals can get tans. However, melanin is a pigment in your skin. The color of melanin is constant, so it does NOT get darker as you tan. What happens is that the melanin becomes more concentrated in your skin cells, so they look darker. The pigment itself does not change color.

I know that dogs and cats can get sunburns, so I guess it would follow that with the right pigmentation they could also tan, if they so chose.

All skin has melanin in it, and when you get a tan, the melanin in your skin gets darker, which makes your skin darker. This applies to all animals.
