Because men do not realize how important women find shopping. For most men, shopping is the equivalent of running a simple errand. But if a man realizes that shopping is both important and very enjoyable in the eyes of his woman, then he might make an effort to be more enthusiastic about the whole process.
Men often ask their women to join them at business dinners or business related events. These are generally not very enjoyable, but a good wife or girlfriend will try to be a presentable companion for the benefit of her man. And sometimes a woman will accompany her man to a sporting event at his request even though she does not enjoy the sport.
A woman will do these things for her man because she knows it is important to him, and in so doing, she may enjoy a part of the event or learn something useful. She may even appreciate that she had a chance to be near him and to share a part of his life.
If a man can realize that shopping is important to her, then he may care enough to share the experience and learn why it is important to women, and perhaps he might at least appreciate sharing a part of her life.

Shopping is one of the most boring events in a guy's life, unless he is shopping for something he is extremely interested in. When we shop, 90% of the time we know where and why we are going to shop and we're in and out. Women linger in stores. They look at EVERYTHING. Guys seem bored when they accompany women shopping because they are bored. They're bored out of their skull. Some are more patient than others. Some will bite the bullet and just try to make it through the boredom, some will look for any excuse or oppurtunity to get the hell out of there as soon as they possibly can. Of course this isn't a solid rule for all men everywhere. It's a spectrum. The more feminine a man is tends to correlate to how much he will like to shop.

Men, as a general rule, don't do a lot of shopping. If they legitimately need new clothes (and there is a pretty broad interpretiation of this one), they go and spend the least amount of time doing so. If they need to buy tools or groceries, they know where to go, they usually know what they want ahead of time, they get what they want and they leave.
Women, however, tend to see shopping as an end in itself, and enjoy the process a great deal more. So spending three hours trying on clothes just isn't all that interesting, especially for the guy who has to stand outside the women's dressing room all that time with nothing to do. It might be a fun trip for his girlfriend, because she's doing what she enjoys doing, and she's actually doing something. Try it sometime: just go hang out in the men's clothing section by the changing rooms. Don't look at anything. Don't talk to anyone; they'll ignore you, because they'll assume you're waiting for someone in the changing room. Just stand there for a couple of hours and tell me how fun it is.
Understanding this, my wife tells me she's going to be a while, and I can go wander off to do my own thing. We arrange to meet up later once she's all done, and we can go do something together that we both enjoy. I'd recommend it to every couple.

They do not seem to enjoy shopping. They enjoy buying.
Also I think they are on edge whenever we ask, "Do you like this dress or the last one?" I think they figure its a load question and there is no "right" answer.
As one or two guy have already pointed out, how would like to hang out at home depot trying out 12 different types of drills. We'll I might not mind but most women would feel like the guy holding the purse!

And what the hell I'm I suppose to do? There's nothing for me to DO while I'm there. I usually find the Man Chair and stake my claim so I can play the games on my phone. This is the only time I use those games. I am available to respond to questions like "Do these lines around the blah blah blah blah make my ____ look fat?" There is not right answers in the store. You can only look at the bra models so much before they too loose their novelty

Because it's borning. There is nothing entertaining about following your wife/girlfriend around the store hoping she won't buy anything you can't afford.
