You can thin hostas out in the spring or fall. I've often divided and thinned mine in both spring and fall (zone 5) and they're doing fine. If you're doing it in the fall just make sure they have at least 4 weeks before the last frost date to let the roots settle in.

The best time to thin your hostas is in early spring when they're just starting to push through the ground. They will suffer the least at this point. Some people will do it a little later in the year after they've started leaving out and the plants will be ok...but the best time is in spring.

I have divided my hostas spring, summer, and fall. They seem to be very hardy. The easiest time is in spring when they start shooting up. They won't be as heavy with all the foliage. If you divide in summer, make sure you water them well until they get established in their new setting.
