Most people love tacos, taco salad, tortillas, enchiladas (Make them with beef). Some like chicken fajitas. Nachos Grande is also a very popular dish (tortilla chips covered in beef and black bean sauce, shredded cheeses melted over it, and on the side there is big dollops of sour scream and fresh guacamouli.) Goes great with a cold beer!

Probably Tacos. I'm going to give you my wife's favorite mexican food. It called Pico DeGuio(spelling?) It's a very simple slasa style dish that can be used as a topping of garnish, but she loves it as a light satsifying lunch on crispy corn tortillas.

11/2 cup fresh diced tomato
1 whole ripe avacado
1 small onion (about 1/2 a cup)
1 tbsp lime juice
1/3 to 1/2 cup fresh cilantro
1 small jalapeno
salt to taste
Take your tomato and cut in half. remove seeds and dice tomato. Cut your avacado around the middle lengthwise. Let your knife slide along the pit until you comple a full turn around avacado. turn each side in opposite directions and pull away from each other to break open . remove pit and scoop out flesh with a spoon big enough to keep the avacado in one piece out of skin. Dice avacado. peel and dice onion. You may wish to wear gloves to cut jalepeno. cut off stem end and slice jalepeno in half lengthwise. remove seed and white membrane carefully. This is the hottest part of the jalepeno! dice up jalepeno as small as you safely can. A little goes a long way. Avoid contact with sensitve areas(eyes, lips, etc.) until after you have washed your hands. take a small bunch of fresh cilatro and pull off the leaves in to a pile and chop. Run your knife through several times from various angle to chop it fine. Toss together in bowl with lime juice. I prefer fresh lime. one half should work or one whole key lime. The key lime will make it more tart. Add salt to taste.
We don't add any salt since my wife is on a low sodium diet. If you are buying pre baked corn tortillas, they have plenty of salt on them already. I hope you enjoy the dish.
