Monogamous is the word for one sexual partner
Polygamous for more than one...
(Lucky is another one. ~smiles~)
Bisexual if the partner(s) can be either sex
Lesbian if you are a woman and your sexual parther is another woman
Homosexual if you are a man and you prefer another man.
Other words used to describe the last two are Gay, Queer, Lesbo, etc. but are not preferred words...They are just slang.

With one partner the relationship (or marriage) is monogamous or monogamy. From that point on -- you can interpret more than one partner in (like a marriage relationship) as a Plural Marriage for example.
