im am just about to harvest my betroot crop and need to store it i can only pickle so much can i freeze the rest or are there any other ways i can store it

"When harvesting beetroot, especially if they will not be eaten immediately, cut the leaves off about 5cm (2in) above the root. This will keep them fresh longer and prevent them from 'bleeding'. Use a trowel to dig gently under the bulb and gently tease it away from the soil. Avoid damaging the root in order to keep them fresh for long time.

Store the beetroot in boxes (layers separated by sand or peat) in a cool dark place such as the garage or shed. They must kept free of all but a very light frost."

To be honest; we've done what you're talking about. Pickling and freezing. Seems to have worked so far,

Oh! Yum - real fresh beetroot! Send it to me!!! Hmm, not storing it, is it?
Okay, when you pickle, try pickling it with a slice of onion between each slice of beetroot. Okay, I know that it is still pickled - but it does taste wonderful!
I would have thought that being a root, you should be able to store it in the same way as other roots, such as swede but I guess that you would already know not to cut the ends off because it will bleed.
I just can't imagine growing my own beetroot and then storing it - I would have to eat it right away! Freshly boiled and still warm - Oh, goodness, so yummy! And what you don't eat freshly boiled one day, shallow fry on the next! I can almost smell that wonderful earthy scent!
Don't check your poo's though! They might give you a bit of a fright!

Last year I stored ours in the bottom of an old fridge wrapped in newspaper. The fridge was switched on of course. We finished it about 5 weeks ago and it was still delicious. The year before I did the same with a glut of Apples that we had and they also kept well into the new year.

After cooking and cooling, slice and jar them, cover with a good quality olive oil................delicious.
