Also, remember that some of these tolls can now only be paid by an "E-tag" which is a pre-paid tag which you put in the front window of the car, and gets scanned at toll stations. Without this, you cannot drive on some roads. (M5, Cross City Tunnel etc.)
I think you can order one from the NSW Roads & Traffic Authority website (www.rta.nsw.gov.au), however, if you are staying around the main tourist centres of Sydney, or leaving the city to go north, I doubt you'll need one, as the only tolls you will really hit will be the Sydney Harbour Bridge or the Harbour Tunnel, which can still be paid in cash. (Although this will change soon)
The other toll roads are really more use for residents then visitors.
