Stainless: food industry (anywhere it has to come in contact with food) chemical industry (some types are acid resistant) and surgery (Vitallium, used for hip replacement implants.)

Nickel (in alloys, adds toughness to metals.) actually, nickel is an ingredient in stainless steel. Also used as a rust-resistant plating.

Zinc: rust protection, either by hot (molten) dip galvanizing or by electro-galvanizing (effectively, plating.)

Chromium: rust-resistant platings, leather tanning, dyes. Chromium is fairly poisonous in some of its compounds and is not used as much for leather tanning as it once was. The difficulties of cleaning up chromium from the environment also make manufacturers shy away from it. Chromium is also used as an alloying element for tool steels.

Yes stainless steel is available in many alloys. All contain some nickel (up to 8%). Worn next to the skin (eg a watch), enough nickel ions are released to trigger allergy in hypersensitive individuals.
